Mas-huni or MASHUNI (Dhivehi: މަސްހުނި)

is a typical Maldivian breakfast, consisting of tuna, red onion or shallots for milder union flavour, coconut, lime juice, finely chopped curry leaves salt to taste and chili.

🥥 Ingredients:
• 1 cup canned tuna (preferably smoked or in 0live oil)
• 1 cup freshly grated coconut
• fresh curry leaves 🍃, finely chopped
• 1 small red onion or a shallot, finely chopped
• 1 red chilli (or Scotch bonnet), finely chopped
• Juice of 1 lime
• Salt, to taste
🧑🍳 Instructions:
1. In a bowl, combine the chopped onion, chopped chilli, chopped curry leaves 🍃, lime juice, and salt.
Mix well, gently pressing the ingredients to release their flavors.
2. Add the drained (i’ve left the oil in as i prefer it not so dry) tuna to the mixture and combine thoroughly.
3. Incorporate the grated coconut, mixing until evenly distributed.
4. Let the mixture sit for a few minutes to allow the flavors to meld.
5. Serve with freshly made Roshi.

🫓 Roshi (Maldivian Flatbread) Recipe:
Roshi is a soft, unleavened flatbread that complements Mashuni perfectly.
🌾 Ingredients:
• 300g all-purpose flour (plus extra for dusting)
• 1 tablespoon vegetable oil
• 1 teaspoon salt
• Approximately 200ml warm water
• Optional: 50g shredded coconut for added flavor
🧑🍳 Instructions:
1. In a large bowl, mix the flour, salt, and vegetable oil.
2. Gradually add warm water, kneading until a smooth, non-sticky dough forms.
3. Cover the dough and let it rest for about 30 minutes.
4. Divide the dough into golf ball-sized portions.
5. On a floured surface, roll each ball into a thin circle, approximately 6 inches in diameter.
6. Heat a skillet over medium heat. Cook each roshi for 1-2 minutes on each side, or until light brown spots appear.
7. Keep the cooked roshi covered with a clean towel to maintain softness.
PS:Adding shredded coconut to the dough imparts a subtle sweetness and enhances the flavor.
🌿 Variations & Serving Suggestions;
• Greens: Incorporate finely chopped greens like kale or spinach into the Mashuni for added nutrition.
• Heat: Adjust the amount of chilli to suit your spice preference.
• Serving: Traditionally, Mashuni is enjoyed by scooping it up with pieces of Roshi.
